
April 5th marked one month since I started on this whole foods, plant based (“WFPB”) journey. I have to say, I feel amazing. Sleeping better, hardly any stomach issues (even when traveling) and I’m excited to see what’s for dinner most days.
And bonus…I lost 9.2 lbs for the month.
I traveled for work last week, and I have to admit, I was nervous if I would be able to keep going on the road. Fortunately, Denver is one of the more health conscious places you can visit.
First off, I booked a Residence Inn. Each room comes with a kitchenette – a stove, a microwave and a fridge.
I landed and went straight to the store having preplanned my meals before boarding the flight. I knew I would eat out at least two dinners, but that left three breakfasts, three lunches and 2 dinners to cover. I managed to do that on about $50.
My nights out were spent with my friend Alan, and the second dinner was with co-workers.
Alan picked a GREAT Thai restaurant called the “Thai Pot Cafe” off of University. It was fantastic! Nearly ever dish was marked as “could be made Vegan”. That made life much easier. And delicious. I had a curry dish that was delicious!
The next dinner out was at El Five – a lovely dining establishment in the RiNo district of downtown Denver. Great views, great conversation, and great options. It’s a Mediterranean eatery with Mezze platters, Tapas, and Paella.
We started with a Hummus platter that was outstanding. There was a smoky hummus that I am still trying to figure out. The flavor still lingers on my tongue.
Next up was a Moroccan mushroom and couscous dish. Oyster mushrooms are some of my favs, so that was great as well.
We stopped after Tapas and I was more than full. The sun set, the city came to life and we enjoyed conversation, a few drinks and the view.
Last month was a month of learning, exploration and pleasant surprises. This month we will reintroduce exercise. My foot has been in a boot for the last few weeks, so I’m excited to take that off and get moving again.
I also visited the Forks Over Knives website and purchased their WFPB starter magazine bundle. Included in one of the copies is a 5-day meal plan. I tried the Mushroom, Spinach and Orzo dish last night. About 30 minutes to prepare and it felt like comfort food. And it was yummy to boot.
